I just had my Grundo zapped to Mallow... Now here's the question: Do I keep going to hope she turns back into a girl (zapped to a boy a long time ago) orrrr chicken out because I don't want to lose his cool new look??

You don't have to go through the lab ray again just to change gender. Just have a BD fight with the lab scientist and he'll change your pets gender at around the 2nd move. Usually.

So don't risk the ray!
